Millet, is a nutritional powerhouse among grains. Millet is gluten free and is a good source of protein and several other nutrients, including magnesium, iron, phosphorus, and manganese. Millet contains silica, which helps keep bones flexible in the aging process. Millet is good for the kidneys, stomach and soothes the body to help relieve indigestion.
Typically found as an ingredient in bird seed, this is by no means food for the birds. It cooks up in just 20 minutes and is fluffy like mashed potatoes. A nice alternative to rice or potato, that goes really well with many foods. Serve as a side with dinner or mix with fresh fruit and raw honey for breakfast. For best results, rinse millet before you cook it and use one part millet to two parts liquid.
Millet is an excellent whole grain to add to your diet. Millet flour is also great to use for your gluten free baking. Check out this tasty recipe for a gluten free chocolate treat.
